Easy vegan lasagna

So I was cleaning out my freezer for Christmas and found some plant based mince at the back of a shelf.



Lasgana!

For the easiest quick yummy meal.

Fry the defrosted (or frozen - it'll break down pretty quickly in the heat of the pan) with sauteed onions and garlic until coloured (I also added a wrinkly green pepper). Chuck a jar of good tomato sauce in and stir.



Layer up the tomato sauce with no cook (egg free) lasagna sheets and vegan cheese sauce - I buy a cheese sauce mix from the VeganKind Supermarket online. I like two layers repeating but you can go three.

Top off with loads of vegan cheese - the best melting cheese for me is vegan applewood smoky cheese. I also add my home made parmesan - see blog on how to make it here


Bake until hot and bubbling - around 30 minutes in a medium oven 200c/180cfan/Gas 5/375f.
