Berry compot

When you have a couple of squishy strawberries or a handful of soft raspberries or a few bruised blueberries in the corner of that punnet, do you throw them away? Well STOP! Just keep adding them to a bag or pot in the freezer until you have enough to make A BERRY COMPOT.
Simply simmer until mushy with a teaspoon (or so depending on your taste) of sugar, honey, or low calorie sweetner (your choice) to every 250g of frozen berries and a tablespoon of liquid - alcohol, fruit juice, water. Add hot or cold to pancakes, yoghurt, ice cream - oh, here's a thought; when I use an egg wash to glaze my pastry I save the egg white in the freezer. Once I have three, I defrost them to make a pavlova - great with berry compot - and all from left over food that might have been thrown away!
