Blackcurrant cordial steamed pudding

Found an out of date half full bottle of blackcurrant cordial in my cocktail cupboard.


Now, I'm not a blackcurrant cordial fan (unless it's in a cocktail, of course) but it smelled and tasted fine and I simply didn't want it to go to waste (this is theSOSkitchen after all).
Fridge and cupboard staples revealed blackcurrant jam, flour, vegan butter, eggs, sugar - and I thought: I wonder if adding blackcurrant cordial to a steamed sponge will enhance the flavour. Take another look at the opening photo: what do you think?
And you're right! It was delicious!
So...out of date or in date blackcurrant cordial.....off we go:
Butter a 750ml pudding bowl, load the base with two heaped tablespoons of blackcurrant jam, then set a steamer on the hob.
Beat together 100g vegan butter and 100g caster sugar until pale and sugar grit free (i.e. - you can't feel the sugar granules between your finger tips).
Add 2 eggs, 1 at a time, and beat until you have a smooth batter.
Now stir in 2 tablespoons of blackcurrant cordial, and sift and fold in 100g of self raising flour.
Combine well but try not to overmix, pour into the pudding bowl, cover with a bacofoil, set in the steamer, steam for 2hrs.
Turn out and serve with cream, custard, or ice cream.
