Candied, chocolate dipped peel from wrinkly old oranges that nobody fancies.
Cut the oranges (or lemons or limes) in quarters and peel.
Cut the peel into 2, 3 or 4 pieces (depends on size of orange - you want the strips to be about 1cm wide).
Plonk into a pan, cover with cold water and bring to a boil. Then simmer for five minutes.
Strain.
Cover again with cold water and bring to a boil and this time simmer for 30 minutes.
Strain but reserve the cooking liquid and measure. For every 100mls of liquid add 100g granulated sugar. Plonk the strips back in, bring to a boil again and simmer for 30 minutes until transluscent.
Turn off the pan and leave everything to go cold.
Lift the peel out and air dry for 30 minutes or so on a wire rack.
NOTE - keep the orange flavoured syrup in a jar in the fridge - use over yoghurt, in recipes, shakes, etc.
Toss the peel in granulated sugar and air dry for another hour or so. You can also dip one end in melted vegan chocolate. Will keep for weeks in an airtight container.
