
Doh! Don't be throwing left over rice pudding away! Make these yummy arancini dohnuts and you'll be a hero.
I had a bowl of left over rice pudding, speckled with raspberries.

I set up a station consisting of flour, egg, breadcrumbs, jam.

Then I took an ice-cream-scoop-full of the left over rice and made a hollow in the middle which I filled with a teaspoon of jam.

Then I closed up the dohnut by topping the jam with a tabelspoon of the left over rice.

Now, gently, the rice dohnut ball gets coated in flour then egg, then breadcrumbs. Use plant based milk to make this vegan (but ensure the rice pudding was made similarly). And of course you can use home made breadcrumbs, I just prefer the flatter finish of shop bought breadcrumbs for this recipe - gives a smarter finish I think.

Now they need to be fried in hot oil until crispy all over.

Drain them

Dust them with sugar
