Courgetteroni Pizza

Want a pizza with that distinct pepperoni taste but without the meat? Easy!

Take 1 large courgette and slice into coins.

In a bowl mix 3 tablespoons oil with 1/2 a teaspoon each of sweet paprika, garlic powder, salt, dry mustard powder, red pepper flakes, fennel seeds, black pepper, and liquid smoke (available online).

Now toss the courgette slices in the mix, lay out on a plate in a single layer, and refrigerate overnight.



For the pizza, use your favourite method of making a pizza base - I just use a tortilla (I like a crispy base), spread with a tomato base sauce (make your own or use some manrinara sauce from a jar), then top with your favourrite toppings and the courgetteroni.
