Do not be afraid!
Sweet grapes used in place of sweet tomatoes in this salsa make it a winner!
Based on Pico de Gallo, take around 500g of black or green grapes that have reached that bruised or soft stage and instead of throwing them away, chop them in half, add a small chopped red onion (or yellow onion, or shallot) with around 100g chopped coriander (fresh, frozen or dry - but if dry use just 50g) with 3 tablespoons of lime or lemon or orange or grapefruit juice (freshly squeezed if at all possible) and one or two chopped (and deseeded) chillies, a large pinch of pepper and salt and a good slug of olive oil.
Mix and stand at room temperature for 20 minutes or so - delish!
A note on amounts and taste - the thing about any salsa is that it should be to your taste and what you have - so if you've only got 125g grapes, reduce all the other amounts or add some tomatoes. If you haven't got coriander, add parsely, or chives, or basil. If you've only got a chilli sauce; add that instead of fresh chillies.
Keep tasting; you'll know when it tastes right for you.
I also added green olives - yum!
