Green tomato chutney - one for the growers (and growers' friends)

Such a simple (and yet delicious) recipe to use up those tomatoes that have missed their chance to become red and sexy.
Quarter 1kg of green tomatoes. Add to a large pan wth 250mls of vinegar (any vinegar is fine although I use white distilled as I prefer a delicate tang) with 250g of sugar (any sugar, but again, I prefer dark brown as I like the molasses flavour).
Then add one to two tablespoons of any additional flavouring of your choice (or don't) - chilli, ginger, mustard seeds, garlic - anything you like - experiment!
(I added a tablespoon of mustard seeds and a tablespoon of chopped chilli)
Finish with a heaped teaspoon of salt.
Now bring the whole thing to a rolling boil and bubble until you have the consistency you like.
