Green vegetable dhal using spiralizer left overs

Hhmmm - thick and spicy with home made chapatis.
What to do with those bits of veg left over from the spiralizer (in this case the cores of courgette left over after making courgette linguine) or any slightly browning green veg and a tin of green lentils?
Simply chop all veg (around 1kg) , add 2 'hot' sliced chillies, a tablespoon of ground (or fresh) ginger, a teaspoon of tumeric, 2 cloves garlic, the juice of one lime (or lemon) (or verjuice - a grape vinegar - recipe coming soon) a 400ml can of coconut milk, a teaspoon of sugar, and salt and pepper to taste.
Run through a preheated oven 190c/375f/Gas6 until the veg is charring at the edges (this stage can be omitted but the charring gives a lovely smoky flavour).
Then either cover and cook for a good 2 hours in the oven on a very low heat (100c/225f/Gas 1) or transfer to a slow cooker and leave on low until your ready to eat (this is what I did).
I then used a stick liquidser to smash the larger lumps of veg up (you may not need to) before stirring in the lentils and letting it heat through again.
See #MusicMick's verdict but note this definitely benefits from a blob of cold plain yoghurt on the top.
