
Using out of date halloumi (how can cheese go out of date? surely it's just aged?) and carrots that were losing there crunch.

This recipe can also be made into small balls for canapes.
Just take 250g block of halloumi with two large carrots. Grate them both into a bowl and add 4 tablespoons of any flour, 1 egg, 2 teaspoons each of cumin seeds and paprika (to be honest you can add any spices or herbs you fancy or have). Leave out the salt as the halloumi is salty enough but do add a good twist of black pepper.
Form into fritters or balls (as above)

Leave to chill in the fridge for a good hour or overnight before shallow or deep frying until crispy brown.

I served them hot with salad and the left overs cold with chips - yum!
