Herb oil using left over herbs

Got to the end of that pot of herbs? Don't toss them out. Cut the whole lot down to base, plonk into a hand blender pot. Just cover with oil (rapeseed or olive oil are my favourtites) and blend. Sieve or leave with bits in (I do) and bottle. Will keep in fridge for weeks and can be used in marinades, dressings, or just drizzled over as is on anything you fancy (like basil oil over mozarella, tomatoes and avocado - tricolore!)
