Kiwi cake using squishy old kiwis

This is a MUST try.

If you've got 5-6 squishy over ripe kiwis in your fruit bowl, then this recipe is for you. If you haven't, then buy 5-6 kiwis and let them go squishy. Ha!

First things first - preheat oven to 180c/350c/Gas 5 and grease your cake tin of choice (needs to hold about 1000 mls or use a couple of smaller tins)

So - scoop out the flesh of the 5-6 over ripe kiwis and mash. Then beat together 125 grams of butter or palm free vegan magarine (my personal choice) (you can substitute 125 mls of oil if you like - see note below though) with 225 grams sugar (any sugar is just fine) and a pinch of salt. You want the mixture to be well blended, like paste Then add two beaten eggs, one at a tme, beating until well combined.

Note - if using oil just add everything into the same bowl with the dry ingredients - this is the one bowl method - I prefer margarine and sugar beaten together - I think you get a softer crumb to the cake that way.

In another bowl, measure the dry ingredients: 1/2 teaspoon each of bicarbonate of soda and baking powder with 250 grams plain flour (if you've only got self raising half the amount of bicarb and baking soda). Best if you can sift this but if not give a good old mix to combine everything.

Then add the wet stuff to the dry stuff and the kiwi mash and mix well - don't beat the hell out of it though. It might look a little curdled - don't fret.

Tip into a tin of choice - I used 3 x 300ml foil trays so that I can give two away.

Cook in centre of oven until a skewer comes out clean - somewhere between 30 minutes and an hour depending on your tin size.

Turn out and cool on a rack or paper towel.
