Ever need an egg yolk for a recipe? What to do with the egg white?
Freeze it!

I pour left over egg whites into the same pot in the freezer until I have 3 - then out they come to defrost perfectly and get whipped up aka pavlova style with 200 grams of caster sugar, 1 rounded teaspoon of cornflour, the finely grated rind of a lemon, and 1 teaspoon of lemon juice.
Then I make the topping with whatever I have to hand - in this case, lemon curd, some creme fraiche, and blueberries. But I've used jam, clooted cream, and strawberries. I've also added 2 tablespoons of cocoa powder to the pavlova mix and topped with coconut yoghurt and broken up chocolate flakes. Anything goes!
Freeze those egg whites and on a rainy day - get creative!
