Mashed potato pancakes

Got some left over mash - you got pancakes!


The following recipe was inspired by Janene Moat of Essential Beauty:


Janene joined the SOS kitchen campaign this week and made banana pancakes from manky bananas. Woohoo!


So when I found a cup of left over cold mash in my fridge, pancakes came to mind.


To make 6 pancakes take 1 cup (125g) cold mash potato, 1 cup grated cheese (I used halloumi, but you could try cheddar, or leave out the cheese and add grated mushrooms or beetroot - it's your pancake) 1 cup flour, 1 tablespoon chopped chives (or any herb of your liking) a teaspoon of cayenne (or any spice of your choice - or none) teaspoon salt and pepper.

Plonk it all in a bowl and add one egg - mix, just turning it together for a bit, add up to a tablespoon of milk until you get a thick dough that will drop of a spoon if given a shake.

Divide into six (I use an ice-cream scoop) and shallow fry in a tablespoon of oil until crispy on bo

th sides - around 2-3 minutes.
