Morrocan rice sausages

Not so much a recipe as a how to bring together a collection of fridge leftovers and make sausages for tea.

So it all started with 250g of cold left over rice. Digging around in the fridge I also found 4 floppy spring onions and 200g (that's 1/2 a can) of mixed beans.


Once the spring onions had been topped and tailed I plonked the whole lot in a food processor with a mix of herbs and/or spices (your choice - in total 2 teaspoons).

However, in order to make these sausages sing out 'Morrocan' I used 1/2 teaspoon each of paprika, cumin, coriander, and cinnamon. Add in another 1/2 teaspoon each of salt and pepper and a fat clove of garlic.

Blitz.

Now, the mix has to hold together to make sausages - it might be too dry, or too wet. If it's too dry add an egg, or a little honey, or maple syrup, or yoghurt, or water - basically something wet! If it's too wet, add flour, or breadcrumbs, or crisps or nuts that have been smashed to almost powder, or oats - basically something dry! You may have to add little spoons of wet and dry until you get the right consistency.

As you can see in the video, my mixture was just right and held together when squeezed in the hand.

It was then formed into sausages and left to set in the fridge, before baking in the oven - you could, of course, fry them.
