Pasta bubble and coleslaw squeak

Made from a small bowl of left over coleslaw and limp cold pasta comes a new SOS kitchen recipe.
So first the squeak. Now, I like a fried egg with my bubble and squeak, but in this 'make something from leftovers' recipe the egg has become a part of the fritata.
Step one, I fried the coleslaw (orginally made with red and green cabbge, onions, carrots, peanuts, vegan mayonnaise, and s plash of soya yoghurt - but any coleslaw would do - why not?). Once the coleslaw was softening (photo one), I added a couple of beaten eggs (photo two) and finished off in the oven. Once turned out onto a plate (aka tarte tatin) it was served cold alongside the hot crispy pasta bubble (photo three). So...on to the pasta bubble:
The pasta bubble was made by chucking some left over pasta into a a frying pan.

This particular pasta was gluten free and originally had a sauce of oil, garlic, chilli, red pepper and mushrooms - but really, any pasta in any sauce would do. Note not to crowd the pan, use one to two tablespoons of oil because you're looking for crispy, and be patient.

Not so much a recipe as a true SOS kitchen dinner of left overs made magic.
