Piecemeal Pesto

Take a cup of any little bits of left over herbs - mix basil with parsley - or coriander with spinach - or mint with chives (it's your pesto - mix and match and experment - the key is to run a no-waste kitchen and use up leftovers that you might once have thrown away) add 1 tablespoon each of parmesan (or any hard cheese), pine nuts (or any nut as long as they're not salted), lemon juice (or lime juice - I've even used grapefruit juice) plus 1 clove of garlic, a pinch of salt, and then blitz with 1-3 tablespoons of oil until you have a thick and sloppy pesto. Perfect on pasta.
