A simple way to turn left overs into a pate (or sandwich spread)


Above is a photo of last night's left overs - beetroot falafels, tahini yoghurt, coriander cous cous, and feta fried in chilli and garlic - yes, I said fried; feta served hot in garlic and chilli oil is yum. Try it.

So I was thinking.....hhhmmm, I wonder if I could mash this up and add to bread dough to make a flavoured bread?

So I mashed it up....


Tasted it for seasoning, and thought...wow, this would make a great sandwich spread or pate:

Pot Luck Pate was born.

I just added a couple of tablespoons of cream to loosen the mixture to a spreading consisitency.

And when you're next presented with a few bowls of left overs - veg, meat, cheese, or fish based - just mash it up, add some cream (vegan if you like) or melted butter (or naturli - a vegan margarine without palm oil) or even mayonnaise and hey presto! - The week's sandwich filler sorted!

I reckon left over roast dinner pate would be amazing for the meat eaters.
