Rhubarb cake

Got a glut of rhubarba, or apples, or pears, or a little of each? Make this yummy cake and invite a friend around for tea :-)


Set the oven to 160c/320f/gas 4

Simply chop (if using pears or apples then peel first - if using rhubarb just take off the ends and any thick stringy bits) the fruit into thumb nail chunks until you have 300g.

Then mix together 100g each of self raising flour, sugar (whatever sugar you have), vegan butter (melted), and ground almonds, with 2 tsps each of baking powder, ground ginger, and the syrup from a jar of stem ginger if you have it, then add 3 beaten eggs and beat the whole lot with a wooden spoon until combined before stirring in the fruit.

Tip into a prepared cake tin (mine is 8 inches diameter - I like a round cake but you can make this in a loaf tin - that I have greased and lined the base with greaseproof paper) and bake in centre of the oven for 35 to 45 minutes until a a knife or skewer poked into the centre comes out clean.
