OMG. So easy amd so scrummy. Left over vegan almond and clementine cake (any cake will do) cut to fit the base of a pretty glass. Add 5mls of cointreau and brandy (yes both) to each in order to soak the cake (ok add 10mls of each if you like! #MusicMick thinks so!). Then top with stewed apples (or any fruit from pan or tin). Top it off with vegan yoghurt that's been blitzed with blueberries and a little sugar (or use vegan cream).
One is never enough.
