Vegan patties made from soup sludge

Sounds disgusting but trust me - #MusicMick polished off two of them after we'd finished filming.

So it all began when I made a soup with left over kale, chucked in a few carrots, and some herbs and onions.
Once I'd liquidised the soup and tasted for seasoning, adding a little chilli, I found it too fibrous so decided to sieve it.

The soup (beneath the sieve of sludge) had soya cream added and was velvety and yum.
But I had all this healthy left over squished up veg:

I thought; Vegan pattties!
What did I have to lose?
Other than a cup of bulgar wheat (cous cous or polenta- would do) to give the patties body and to bring it together: 1/2 cup of breadcrumbs (flour would do) with the yolk of an egg - the mixture was still quite wet so I thought a whole egg would be too much (and I was right) BTW I froze the egg white to use another time - see previous blog on freezing

Mixed up and formed into patties then chilled to let everything settle (made the patties less fragile) they were ready to shallow fry
BTW the soup sludge was already well seasoned as a soup so I didn't add any extra seasoning and that was a good call:

And once fried until crisp: quite a transformation!
